Food activist and co-operator of the Berlin butcher shop "Kumpel & Keule", Hendrik Haase founded a sham meat company together with the team of the ZDF political program Frontal 21. It advertises with its "Rheinsberger Wurstwaren" brand, with a homely image and on first-name terms with the consumer. The purpose of the whole thing is to establish contacts with a particularly dubious supplier industry: a disposal company that produces functional proteins from slaughterhouse waste, bone remains, for example, or, as the company representative calls it during the sales pitch, “makes shit gold”. These proteins are then mixed with water and added to meat and sausage products to give them up to 20 percent more volume. This can be seen quite clearly from the punctures in the uncovered film recordings (apparently nobody in the German Food Institute in Quakenbrück suspected anything). In the supermarket, however, this is no longer the case, and it is said that the hydrobolic proteins can hardly be used to prove that the product was stretched with water. Color made from blood gives burger patties and pork belly the correspondingly chic look for cooking on the thousand-euro grill. Happy dining!
Industrially produced meat and sausage products can be adulterated, stretched and colored with proteins from slaughterhouse waste without this being noticed during food controls, research shows Frontal 21.
By adding certain proteins, more water than usual can be added to the meat or sausage. The significantly heavier products can then be sold more expensively. Armin Valet from the Hamburg consumer center criticizes this as consumer deception: "Cut-resistant water is cheap and can of course be foisted on without the consumer noticing."
In Germany, the Sonac company sells such additives, so-called hydrolyzed and functional proteins. Sonac points out to Frontal 21 that these additives comply with food law and that meat producers are responsible for correctly declaring the ingredients used. According to the state Max Rubner Institute, it is currently not possible to clear up deceptions with undeclared water in meat products with proteins from blood plasma.
